Kristine’s apple crisp

  • ½ cup oatmeal
  • 1 cup flour
  • ½ cup brown sugar
  • ½ tsp. Cinnamon
  • ¼ tsp. nutmeg
  • ½ cup salted butter
  • 1 tbsp. Brown sugar
  • ¼ tsp. cinnamon
  • 5 large apples (I like to use a mix of varieties)*

Make the topping: Put oatmeal, flour, sugar and spices in a bowl; stir with a fork to blend slightly. Cut the slightly softened butter into the flour mixture with you fingers or with a pastry cutter. When the mixture begins to hold together and look like large crumbs give it a squeeze with your hands. If it holds together, it is ready to use.

Putting the crisp together: Peel, quarter, and core the apples, then thinly slice into a bowl. Toss the slices with the additional brown sugar and the extra cinnamon. Put the slices into a shallow, unbuttered baking dish (9 x 13). Level them and cover them with an even coating of the topping. Bake in a pre-heated 375 degree F oven until topping is golden brown and crisp and apples are tender, about 45minutes. If apples aren’t yet done and topping is getting brown, cover lightly with foil and bake the crisp a few minutes longer. Remove from oven and serve warm with whipped cream or ice cream. Serves 6
