2016 Carneros Rouge de Noirs
The pairings for our Rouge de Noirs are similar to a dry brut rosé, even though the color is darker due to extended skin contact during fermentation. This bubbly highlights the more delicate flavors of Pinot Noir, and pairs well with mild Asian flavors, smoked seafood, lighter patés, “sweeter” herbs, sun-dried tomatoes, and medium-weight cheeses (including milder blues). It’s also lovely with a classic Manchego cheese! Note: this wine is fruity, but it’s not sweet!
Pair with: Smoked Salmon and Roasted Red Pepper ‘Tartare’
